Good morning, friends! Its Monday and the start of another week! This past week was kind of difficult. When my hubby goes out of town, I kind of forget about cooking..... ok ok, Yeah, I don't cook, like ever. I kind of lightly much throughout the day. Its not the best idea because its easy to go way over your calories if you're eating the wrong foods. But this time I focused on healthy and good for me foods. Lots of fruit, lots and lots of water. I lost another 3 pounds :) (despite having a few rough days at the start of the week)
I'm looking forward to my hubby being home this week and cooking yummy dinners for us to share together!
One of my favorite recipes that I've been making for this diet is turkey meatballs. yum. They take a little time if you brown them in a skillet because you have to watch them, but they make for an easy snack or meal for later in the week and the recipe is easily adaptable to change up for something different.
Turkey Meatballs
1lb ground extra lean turkey meat
1 large egg
1 cup of breadcrumbs (seasoned or unseasoned)
Mix all together with your hands and then spice it up! Italian spices are usually the norm, I guess... but this week I tried some rib rub and it gave the meatballs a yummy smoky flavor. I've thought about using some Mexican inspired spices next week. As long as I'm not sick of meatballs... I don't think there is anyway you can really go wrong here!
This batch makes 30 small meatballs. Roll them up and then cook in a skillet (in batches if your skillet doesn't hold them all) Use tongs to turn and brown on all sides. Store in an airtight container in the refrigerator.

Update: This summer its been hot... and its only going to get hotter. So I've been ALL about wearing skirts. I just put my jeans on for the first time in.... I don't know... like 3 weeks? They haven't been worn since I washed them (and thats usually the worst part about wearing jeans.... Just out of the dryer, they shrink a bit and feel a bit more snug. I always love wearing jeans on the second day... thats when they are the most comfortable!) Y'all... I didn't even have to "suck it in" to get them on!! :D This may be something boys don't have to deal with, but most girls will share in this little victory dance with me! yay! :)
